  • 2 cups chopped pecans
  • 7 oz evaporated milk
  • 0.25 cup butter (cubed)
  • 11 oz vanilla chocolate chips
  • 4 oz vegan marshmallow creme
  • 1 teaspoon vanilla extract

Instructions

  1. In a heavy-bottomed saucepan, combine granulated sugar, evaporated milk, and cubed butter.
  2. Heat over medium heat, stirring constantly until sugar dissolves and mixture reaches a boil.
  3. Boil without stirring until it reaches 245°F (118°C) on a candy thermometer.
  4. Remove from heat and stir in vanilla chocolate chips until melted and smooth.
  5. Mix in vegan marshmallow creme and vanilla extract until well combined.
  6. Gently fold in chopped pecans.
  7. Drop rounded tablespoons onto parchment-lined baking sheets.
  8. Allow to cool completely before serving.
