  • 100 grams rice noodles (vermicelli)
  • 12 rice paper wrappers
  • Chopped vegetables (bell peppers, carrots, cucumber)
  • Chopped fresh herbs (mint and coriander)
  • Chicken or beef (optional)
  • 2 tsp rice apple vinegar
  • Juice of 1/2 lime
  • 1 tsp sugar
  • 1 garlic clove (finely chopped)
  • Optional: chilli flakes or a finely chopped chilli
  • 2 TBSP sweet chilli sauce

Instructions

  1. Cook the rice noodles according to package instructions; drain and rinse under cold water.
  2. Chop vegetables and herbs into thin strips.
  3. Soak one rice paper wrapper in warm water until soft; lay it on a clean surface.
  4. Add a small amount of noodles, vegetables, herbs, and optional protein in the center of the wrapper; fold sides over filling and roll tightly from bottom to top.
  5. Prepare the dipping sauce by mixing vinegar, lime juice, sugar, garlic, and optional chili until well combined.
  6. Serve rolls on a platter with dipping sauce.
