  • 2.2 lbs white rock sugar
  • ½ cup lemon juice (for sterilizing)

Instructions

  1. Wash yuzu thoroughly under running water, then cut each in half and remove seeds.
  2. Layer halved yuzu with rock sugar in a large mixing bowl, gently pressing to release some juice.
  3. Transfer the mixture into mason jars, leaving some space at the top.
  4. Seal jars tightly and let sit in a cool, dark place for 7 days.
  5. After resting, stir syrup into hot water until dissolved; enjoy warm or chilled.
