  • 810 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • 2 tbsp diced red onion (optional)
  • 1 tbsp chopped cilantro
  • Juice of 1 lime
  • 1 cup cooked brown rice
  • Extra cilantro for garnish

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Season shrimp with smoked paprika, garlic powder, salt, and pepper. Sear shrimp for 2-3 minutes per side until pink and charred.
  3. In a mixing bowl, combine corn, pineapple, diced tomato, lime juice, and salt to make the salsa.
  4. Serve cooked brown rice as the base in a bowl or plate. Top with sautéed shrimp and spoon salsa generously over the top.
  5. Garnish with extra cilantro and lime juice before serving.
