810 medium shrimp, peeled & deveined
1 tsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt & black pepper to taste
1 cup corn (fresh, frozen, or canned)
1 cup diced pineapple
1 cup diced tomato
2 tbsp diced red onion (optional)
1 tbsp chopped cilantro
Juice of 1 lime
1 cup cooked brown rice
Extra cilantro for garnish
Instructions
Heat a skillet over medium heat and add olive oil.
Season shrimp with smoked paprika, garlic powder, salt, and pepper. Sear shrimp for 2-3 minutes per side until pink and charred.
In a mixing bowl, combine corn, pineapple, diced tomato, lime juice, and salt to make the salsa.
Serve cooked brown rice as the base in a bowl or plate. Top with sautéed shrimp and spoon salsa generously over the top.
Garnish with extra cilantro and lime juice before serving.
